Marie Paule Azie and Hesta Chooraman, pastry chefs at Royal Palm Beachcomber Luxury, combined their talents with a touch of audacity to design the signature cake for the Group’s collection of hotels. The duo won the Beachcomber Signature Cake Competition and will create this unique and exclusive pastry made with honey harvested from the hives in Beachcomber hotels’ gardens.
This past May, Beachcomber Resorts & Hotels hosted an in-house challenge to create its signature cake. Nine pairs of talented pastry chefs from the Group’s hotels and Beachcomber Catering competed in a grand finale held at the Institut Escoffier.
They had two hours to design gourmet patisseries enhanced with honey from Beachcomber hotels’ gardens. After an emotion-packed competition, the jury members, Jacqueline Dalais, Tiburce Plissonneau Duquesne, Jerome Fabre, Tiina Fabre and Etienne de Senneville were won over by the interpretation of the Royal Palm pastry chefs.
Coral tuile, cremeux with honey from the Royal Palm gardens, Breton shortbread with almonds, orange mousseline, thyme and citrus dacquoise were designed and assembled for the pleasure of the eyes and taste buds. It is an explosion of unexpected tastes, textures and flavours in the mouth and an endless delight for gourmets and gourmands.
This masterpiece required many hours of preparation. “It’s obviously a great pride to imagine and create the Beachcomber hotels’ signature cake. It was a great challenge! We tried many things over and over. We worked on textures, flavours and our favourite ingredients. Our greatest satisfaction will be to see the pleasure and emotion on guests’ faces after tasting the Beachcomber Honey Signature Cake”, say the two champions.
Guests will enjoy the signature cake throughout the Beachcomber Resorts & Hotels from November 2022.
