The Canonnier Beachcomber was the setting for a unique event on the 29th of November. Indeed, the hotel hosted a masterclass by Michelin-starred Italian chef Gianfranco Chiarini. In addition to the hotel’s kitchen brigade, led by Executive Chef Moorugun Coopen, chefs from the different Beachcomber hotels and other Mauritian hospitality establishments learnt from Chef Chiarini’s style of gourmet cuisine and extensive catering experience during his culinary demonstration.
A member of the "Chefs United" association, Gianfranco Chiarini has made his mark on renowned restaurants including Le Cordon Bleu Paris, and has worked under the guidance of masters such as Alain Dutournier and Chef Heinz Beck from La Pergola in Italy. Chef Chiarini frequently appears in the media and is also the author of a large number of culinary books, such as "The Pearl", the second book in a trilogy dealing with the Renaissance of Italian fusion cuisine and prefaced by Chef Paul Bocuse. While Gianfranco Chiarini’s specialty is Italian fusion cuisine, he is considered one of the world’s most multi-disciplinary and multi-talented chefs, based on the variety of techniques and disciplines he employs and the scope and breadth of his cooking.

At the Canonnier Beachcomber, we are fond of new culinary techniques, so our artisans were keen to watch Chef Chiarini at work. He is a Food Technologist and a specialist in scientific cooking, an art that he masters with extraordinary precision. We place a great deal of emphasis on training and this masterclass will help us optimise our knowledge", explains Chef Coopen.
